Homemade spiced parsnip soup, topped with a Maplehurst cider and Bramley apple puree
Crayfish and prawn cocktail, topped with a Merryfield Drive quail egg and roasted red pepper and balsamic dressing
Burnthouse honey roasted ham hock terrine with homemade piccalilli
Baked Stonegate goats' cheese and satsuma filo pastry parcels, served with roasted beetroot dressing
Main Course
Roasted Sussex turkey, served with a homemade prune & chestnut stuffing, cranberry sauce, and local chipolatas wrapped in smoked bacon
Local pheasant casserole, baby onions, lardons of smoked bacon, button mushrooms and tarragon
Fillets of rainbow trout, toasted almond, cranberry, lemon and herb butter sauce, crushed new potatoes
A terrine of carrots, parsnips and chestnuts, with a red wine and cranberry sauce
(The above are served with turned roasted potatoes & a sauté of winter vegetables, tossed in tarragon butter)
Dessert
Traditional Christmas pudding, drizzled with a hot brandy toffee sauce
Treacle and orange tart served with traditional English custard
Festive baked Slipcote cheesecake, with chocolate and Cointreau sauce
Olde Sussex cheddar and Sussex blue cheeseboard, with Sussex kibble, biscuits, grapes and homemade chutney
